  • 4 Violife 100% Vegan Just Like Cheddar Slices
  • 4 portobello mushrooms
  • 2 brioche burger buns
  • red onion, ½ finely chopped, ½ sliced to serve
  • 1 garlic clove, crushed
  • wholegrain mustard
  • Handful of lettuce
  • 2 tbsp olive oil
  • 1 tsp sweet smoked paprika
  • 2 tsp thyme, chopped
  • 30 g fresh breadcrumbs
  • gherkins and vegetable crisps, to serve
For Pie Crust:
  1. Mix all ingredients together and press into pie pan or tin- place in freezer for 30 min to 1 hour prior to adding filling to the crust.
For the Filling:
  1. Beat the Violife cream cheese in a mixing bowl for 20-30 seconds to soften it up.
  2. Add the Violife heavy cream and vanilla and beat for another 30 seconds to 1 minute or until completely smooth.
  3. Slowly add ½ cup of the powdered sugar and beat until smooth. Repeat.
  4. Transfer the cheesecake filling to the pie crust and refrigerate for at least 1 hour before serving.
  5. Top with your favorite fruit, fruit puree or whipped topping and serve.
  6. For an Easy Fruit Puree: Combine fruit, with sugar, and lemon juice (to taste) in a blender and puree until smooth.
  7. For Whipped topping- Use Violife heavy cream and prepare just like traditional heavy cream (whisk or blender).
