  • 2 cup Tteokbokki
  • 2 tbsp Violife Plant Butter
  • 2 tbsp extra virgin olive oil plus extra to serve
  • 1/2 cup shallot sliced
  • 1 tsp salt
  • 1 tsp gochujang chili paste
  • 2 cup San Marzano Tomatoes hand crushed
  • 1 tbsp tomato doppio concentrato
  • 3/4 cup rose wine
  • 1 cup water
  • 3/4 cup Violife Just Like Heavy Whipping Cream
  • 1/4 cup Violife 100% Vegan Just Like Feta to garnish
  • 1 tsp Gochugaru
  1. Melt the coconut butter in a frying pan over medium-low heat , then add the flour and stir until smooth. Add the coconut milk, a bit of paprika and salt then stir continuously until it becomes a rich, thick paste. Remove the pan from the heat, add the Violife slices with cheddar flavour and stir until it melts.
  2. Place tortilla chips in a large bowl. Top them with the sauce, a generous sprinkling of fresh coriander and chopped jalapenos peppers.
