575 grams Flora Plant Cream Double 31% Fat

100 grams Flora Plant Cream 15%

140 grams sugar

300 grams soy milk

1 gram lemon zest

3 grams lemon juice

1 vanilla bean split and scrapped

1 gram gluten free xanthan gum

Combine all ingredients in a stock pot and bring to a boil.

Allow to cool for 15 minutes, and then churn in the ice cream machine for 25 minutes.

Transfer the ice cream to a container and put it in the freezer for at least 3 hours to harden.
