Roasted Asparagus with Avocado
Full of colour and flavour, this vibrant dish uses a range of different dairy free products to create a light, refreshing main everyone will love.
Begin with an avocado emulsion using Meadowland Single, Violife Creamy. Follow with a veloute made by boiling asparagus, reduced with shallots, white wine and spices, and finished off with Meadowland Single and Flora Plant B+tter. White asparagus and roseval potatoes are sous vide with Phase in vacuum bags before cutting the potatoes into small circles for grilling. Finally, avocado rounds are lightly torched, ready for plating.
Assemble all elements on the plate, and decorate with different edible flowers – picture perfect for a Springtime menu.
