Soup:
  • Includes
    250 g leeks, roughly chopped
  • Includes
    125 g celery, roughly chopped
  • Includes
    1 large white onion, sliced
  • Includes
    1 clove of garlic
  • Includes
    300 g broccoli, roughly chopped
  • Includes
    2.5 litre vegetable stock
  • Includes
    200 g Violife Creamy
  • Includes
    20 g za'atar spice blend
  • Includes
    100 g Flora Plant B+tter Unsalted
  • Includes
    20 ml olive oil
  • Includes
    Salt and Pepper to Taste
Za'atar B+tter
Soup:
  1. Toss the broccoli with the olive oil and za’atar spice.
  2. Roast in the oven until the broccoli is tender and slightly charred.
  3. Melt the Flora Unsalted B+tter in a large pan and sweat off the leeks, onions, garlic and celery, until softened.
  4. Add in the hot vegetable stock and simmer.
  5. Add in the roasted spiced broccoli and simmer for a few minutes before blending until smooth.
  6. Once you have reached a smooth consistency (adding a little more stock if necessary) stir in the Violife Creamy until it melts into the soup completely.
  7. Serve with a drizzle of Flora Plant Cream, a sprinkle of za’atar and warm baguette with za’atar B+tter.
Za'atar B+tter
  1. Allow the B+tter to soften to room temperature, blend with the za’atar and smoked salt.
  2. Spread onto slices of warmed sourdough bread and dip into the soup when serving.
