To meet the Paris Agreement goals, we need to change our eating habits and reduce the average carbon footprint per meal to 0,4 kg CO2e. Replacing dairy products with plant-based alternatives is a good way to reduce your carbon footprint.
Cut the cauliflower into bite sized florets and include the stem.
Add the flour, plant-based milk, nutritional yeast, cajun spice and seasoning into a bowl and whisk until a smooth batter forms.
Put the panko breadcrumbs into a separate bowl with the paprika and mix until blended. Add the olive oil until they clump slightly.
Add the cauliflower florets and stem into the batter and coat fully.
Drop the cauliflower pieces into the seasoned panko breadcrumbs until coated, working in small batches at a time.
Spread the cauliflower evenly into lined baking trays and bake in the oven for 20 minutes.
Meanwhile, melt the dairy-free butter in a saucepan or microwave and add the hot sauce, stirring until fully incorporated.
Remove the tray from the oven after 20 minutes cooking and pour over the buttery hot sauce mixture. Make sure all the pieces are coated and give the tray a good shake.
Place the tray back in the oven for a further 20 minutes. They will be perfectly golden and crispy on the outside but use a skewer to ensure the cauliflower is cooked through.
Remove from the oven and serve with hot cheese sauce for dipping.
Cheese sauce
Melt the butter, add the flour and whisk into a paste. You will need to cook out the flour mixture.
Add the mustard and slowly blend in the milk with your whisk. Once combined and started to thicken, melt in the grated cheese and nutritional yeast.
Finish with the cream and season with salt and pepper to taste.
