  • 2 litre Flora Plant Double
  • 800 ml coconut milk
  • 2 vanilla pods
  • 4 Earl Grey tea bags
  • 200 g caster sugar
  • 12 tbsp cornflour
  • 200 g demerara sugar
  • seasonal fruit
  1. Place the Flora Plant Cream, coconut milk, sugar, vanilla and tea bags into a pan and gently stir over a medium heat until the sugar is dissolved.
  2. Mix the cornflour in a separate bowl with 4-6 tablespoons of cold water.
  3. Strain the infused cream onto the cornflour mixture and mix until smooth.
  4. Return to the pan and continue to stir on a medium heat until it begins to thicken.
  5. Pour mixture into dishes and chill for a minimum of 2 hours or over night.
  6. Cover the top with an even layer of demerara sugar and using a blow torch caramelise the top.
  7. Decorate with seasonal fruit and berries.
