Smashed potatoes with whipped Feta and chilli honey flavoured dressing

  1. Place potatoes into a large pan of salted water and boil until soft enough to put a knife in easily.
  2. Drain and allow to cool slightly.
  3. Using a heavy flat object such a glass or end of a rolling pin, press down gently on each potato just enough to break the skins.
  4. Melt the Flora Plant B+tter Unsalted and coat the potatoes in a large roasting pan.
  5. Add in the lemon cut into chunks and the garlic cloves.
  6. Season with plenty of salt the thyme and dried herbs.
  7. Place in a hot oven at approx. 230C for around 30 minutes.
  8. Remove the lemon and garlic and continue to roast the potatoes until golden and crispy.
  9. Blend the Violife Greek White Block, yoghurt, and Flora Plant Cream 31% Fat. Add in the roasted lemon and garlic and blend again.
  10. Remove the potatoes from the oven and toss in the vegan honey, chilli flakes and chopped parsley, season with more salt and pepper.
  11. Serve with a sprinkle of the Violife Greek White Block and a drizzle more of the vegan honey.
