Ingredients
  • 1 pack Violife Creamy
  • 1 kg cherry tomatoes
  • 250 ml vegetable stock
  • 2 garlic cloves, whole
  • 1 onion, quartered
  • 1 tsp paprika
  • 1 Large handful of fresh basil leaves
  • black pepper
Method
  1. Preheat the oven to 200°C.
  2. Place cherry tomatoes and garlic cloves on a large baking tray with a drizzle of olive oil, salt and pepper.
  3. Roast for 25-30 minutes until the tomatoes are soft and golden.
  4. In a large pot, heat some olive oil and sauté the onion for 3-4 minutes. Add the roasted tomatoes, vegetable stock, paprika and bring to a simmer. Add in half of the basil leaves.
  5. Simmer for 10 minutes and then, using a hand blender, blitz the soup until smooth in texture.
  6. Add in half of the Violife creamy and stir until combined. Serve the soup in bowls with a dollop of Creamy in the middle, fresh basil leaves and freshly ground black pepper.
  7. Serve with bread and butter!

A brownie can be cut into small pieces and served on a buffet table.
