Green Pea Soup
  • Vegetable stock – 750 ml
  • Frozen green peas – 750 g
  • Mint – ½ bunch
  • Parsley – ½ bunch
  • Salt & pepper – to taste
Black Garlic Crème
  • Black garlic – 200 g
  • Pear juice – 90 g
  • Sunflower oil – 14 g
  • Xanthan – 1 g
Deep Fried Leek
  • Leek (white part) – 200 g
  • Salt & pepper – to taste
BBQ Leek
  • Leek – 400 g
  • Salt & pepper – to taste
Herring
  • Herring – 15 pcs
Plating
Green Pea Soup
  1. Bring vegetable stock to a boil. Add defrosted peas, bring back to the boil. Add mint and parsley. Blend in a kitchen blender. Pass through a sieve. Season with salt and pepper.
Black Garlic Crème
  1. Black garlic – 200 g Pear juice – 90 g Sunflower oil – 14 g Xanthan – 1 g
Deep Fried Leek
  1. Slice leek into chiffonade (thin strips). Deep fry at 160°C without colouring. Dry further in a food dryer. Season with salt and pepper.
BBQ Leek
  1. BBQ whole leek. Cut into 3 cm chunks. Lightly char with a gas burner. Season with salt and pepper.
Herring
  1. Cut herring diagonally into chunks. Smoke in a food smoker.
Plating
  1. Whip Plant Cream, season with salt and pepper. Heat all components and arrange on plate. Finish with leek oil and fresh herbs/cres
