Pickled Vegetables
  • 250 g carrot thinly sliced lengthways
  • 250 g red cabbage shredded
  • 100 g red onion sliced
  • 10 port cooked black rice
Vinegar Batter
  • 100 g acetic acid 12%
  • 200 g sugar
  • 300 g water
  • 5 g grated ginger
Dressing
  • 200 g mango & chilli spread
  • 200 g Flora Plant 31%
  • salt and pepper
Toppings
  • 200 g edamame beans
  • 250 g sliced avocado
  • 100 g roasted cashews
  • 300 g diced fresh mango
  1. Boil the batter and pickle the vegetables separately and leave for at least 1 hour.
  2. Boil the black rice and let cool.
  3. Whisk together the spread with Flora Plant 31% to just the right creamy dressing. Season with salt, pepper and possibly a little more Sriracha
