Panna cotta
  • 1200 ml Flora Plant 31%
  • 6 g agar agar
  • 300 ml coconut milk
  • 1 vanilla pod
  • 180 g sugar
Berry compote
  • 200 g berry coulis (20% sugar)
  • 40 g socker
  • 3 g agar agar
Cookie crumble
  • 50 g white flour
  • 25 g sugar
  • 25 g Flora Plant B+tter Unsalted
Decoration
  • Fresh berries
  • Zest from an orange
  1. Turn oven to180C.
Panna cotta
  1. Blend agar agar with 100 ml Flora Plant 31%.
  2. Add remaining amount of Flora Plant 31% in a pot together with the coconut milk, sugar and a vanilla pod. Simmer on low heat until the sugar is melted. Remove the vanilla pod but mix the vanilla seeds into the mix.
  3. Add the agar agar mix and bring to boil under 1 minute while stirring. Filter the mix through a sieve and let it cool down slightly before pouring the mix into the serving glasses. Let rest in the fridge to solidify.
Cookie crumble
  1. Combine the butter with the flour and sugar to a crumble dough. Distribute the dough on a baking paper on a oven tray and bake for 8-10 min.
  2. Heat up the berry coulis and add agar agar and bring to boil under 1 min. Let the mix cool down before it´s being poured over the cold panna cotta. Put the glasses back to the fridge until they have a solid consistency.
  3. Decorate with fresh berries and lemon zest.
